Homemade Chocolate Mousse

There truly is no better way to satisfy a chocolate craving than with chocolate mousse. I absolutely love it. The extra time needed to make it is so worth it.

Ingredients

  • 8 oz 8 semisweet or bittersweet chocolate, chopped

  • 4 4 eggs, separated

  • 1/4 cup 1/4 granulated sugar

  • 2 cups 2 heavy cream, divided

  • ½ tsp vanilla extract

  • pinch salt

  • whipped cream and chocolate shavings for garnish (optional)

Directions

  • Separate egg yolks and egg whites.
  • Using a whisk or electric hand mixer, beat the egg yolks and sugar together until light and fluffy.
  • In a small saucepan, heat 1 cup of the heavy cream, vanilla extract and pinch of salt until it just begins to simmer or steam slightly. Do not allow it to boil.
  • Remove cream from heat and add in chopped chocolate. Stir until chocolate has melted and is well incorporated. Set aside and allow the mixture to cool for a little bit.
  • In a separate bowl, beat the egg whites until stiff peaks form.
  • Slowly whisk chocolate mixture into the egg yolks until fully combined.
  • Fold the beaten egg whites into the chocolate mixture until you no longer see large streaks.
  • Whip the remaining heavy cream in a large bowl until stiff peaks form. Gently fold it into the chocolate mixture.
  • Spoon the mousse into individual serving glasses and chill in the refrigerator for at least 2 hours, or until set.
  • Before serving, garnish with whipped cream and chocolate shavings if desired.
