Homemade Chocolate Mousse

minutesThere truly is no better way to satisfy a chocolate craving than with chocolate mousse. I absolutely love it. The extra time needed to make it is so worth it.
Ingredients
8 oz 8 semisweet or bittersweet chocolate, chopped
4 4 eggs, separated
1/4 cup 1/4 granulated sugar
2 cups 2 heavy cream, divided
½ tsp vanilla extract
pinch salt
whipped cream and chocolate shavings for garnish (optional)
Directions
- Separate egg yolks and egg whites.
- Using a whisk or electric hand mixer, beat the egg yolks and sugar together until light and fluffy.
- In a small saucepan, heat 1 cup of the heavy cream, vanilla extract and pinch of salt until it just begins to simmer or steam slightly. Do not allow it to boil.
- Remove cream from heat and add in chopped chocolate. Stir until chocolate has melted and is well incorporated. Set aside and allow the mixture to cool for a little bit.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Slowly whisk chocolate mixture into the egg yolks until fully combined.
- Fold the beaten egg whites into the chocolate mixture until you no longer see large streaks.
- Whip the remaining heavy cream in a large bowl until stiff peaks form. Gently fold it into the chocolate mixture.
- Spoon the mousse into individual serving glasses and chill in the refrigerator for at least 2 hours, or until set.
- Before serving, garnish with whipped cream and chocolate shavings if desired.
