    ZENB Plant-Based Pasta

ZENB (ZEN-bee) is created from the Japanese expression, zenbu, meaning, whole.

    ZENB plant-based pasta products

I love pasta…so much that I am heading to Florence, Italy, in a few weeks for the purpose of eating great pasta. Unfortunately, I can’t often fly off to the beautiful country of Italy for some of the best pasta in the world, so I must find options here at home.

I am a big fan of carbs – something I wish wasn’t true – and pasta has plenty of them. I have tried gluten-free or plant-based pasta before, mainly because, for a while, my son needed to avoid gluten. Honestly, they were always disappointing. The texture and flavor were never right. Gluten-free pasta is sometimes gritty, flavorless, or has an odd flavor.

Recently, I received some pasta samples from ZENB, an innovative plant-based food company creating pasta made from yellow peas, skin and all. I never even heard of yellow peas so I was intrigued. And when I say yellow peas, that’s it. Their pasta is all made with just a single ingredient. This is revolutionary for people eating gluten-free or simply trying to eat healthier. ZENB pasta adds healthy fiber and protein to your diet.

On top of that, ZENB is proud to offer products that are gluten-free, dairy-free, non-GMO, vegan, and always free of artificial colors and flavors. So, onto the important stuff. What did I think of ZENB plant-based pasta? I thought it was fantastic. If I didn’t know it was plant-based I wouldn’t know it was plant-based.

Trying out some ZENB plant-based pasta

    ZENB Agile bowl

First, I tried one of their Agile bowls, Zesty Garlic Spinach. I’m not good at making healthy choices for myself. I tend to grab quick, sometimes unhealthy options because I am often in a hurry to get back to my computer. Let me tell you; the Agile bowl is life-changing for someone like me. All I added was a little water, as the directions say, and plopped it in the microwave. I was left with a yummy, healthy, and very quick lunch. The pasta was al dente, and the Agile bowl was full of fabulous flavor. I was ridiculously excited to have something I could make so quickly that didn’t taste as if I made it in two minutes.

    flowered plate with spaghetti

I also tried ZENB’s spaghetti topped with their Roasted Tomato Garlic & Basil sauce. I make homemade spaghetti sauce about once a week. I will happily substitute my homemade stuff with ZENBs when I am not in the mood to cook. Again, eating something fast and easy that actually tastes good brings me a silly amount of joy. Is that wrong?

In conclusion, ZENB is a great company. Plenty of food businesses turn out “healthy” options, but they forget to include great taste. I love that ZENB is expanding the idea of plant-based pasta while keeping the reality that people want to feel as though they are indulging when enjoying a meal. Healthy doesn’t have to be without taste. By the way, they also make Sweet Carrot Tomato sauce and a Creamy Mushroom, Cauliflower, & Garlic sauce. Sauces come in cardboard for easy recycling too. Check out some of their recipes here.

Check out this fabulous documentary called, “What Plants can do,” featuring Hunter Fieri (son of Guy Fieri of Triple D Nation) on ZENBs website, where they discuss the benefits of plant-based food and the importance of plant crops.

  • Bluehouse Salmon

Today, I spoke with Max Francia of Bluehouse Salmon, an innovative company with a goal to bring you fresh, healthy, chemical-free salmon while also doing its part to collapse the carbon footprint. Whether you’ve long loved salmon or are new to the healthy meat choice, Bluehouse Salmon is one of the only unadulterated options.

Bluehouse Salmon began with the vision of Johan Andreassen and Bjørn-Vegard Løvik, and co-founder Thue Holm. The first site of Bluehouse Salmon was in Denmark, where 25 generations of salmon were raised. Today, they are located in Homestead, Florida, where they raise 225,000 metric tons of salmon each year. To put that in perspective, it’s billions of sustainable salmon dinners every year.

    The meaning behind the name

The name “Bluehouse” stems from the idea that the salmon raised isn’t farmed in the traditional sense, nor is it freely caught in the ocean. Bluehouse Salmon is raised on land, making it more of a greenhouse-type production, hence the name, Bluehouse. The process is fascinating, and I admittedly knew very little about it until now.

    Bluehouse Salmon vs. Farmed Salmon

In traditional salmon farming, the fish live in cages or nets in the ocean water. This method isn’t good for the environment or for your health. According to Sentient Media, salmon farms release excessive amounts of feed, feces, and dead salmon into the ocean. Although all these things are normally found in ocean waters, they are dangerous in concentrated amounts, such as in a salmon farming area.

Unfortunately, because disease spreads easily and quickly in a salmon farm, antibiotics, pesticides, and other chemical treatments are used to try to prevent diseases and their spread. Since farmed salmon live in the ocean, if one or more escape, those diseases are spread to fish in their natural habitat. Even worse, antibiotics and other chemicals spread to our natural ocean waters, hurting the environment and any fish you may eat.

Bluehouse Salmon uses NO ANTIBIOTICS or chemicals in the treatment of their salmon. They are passionate about your health and the environment. The salmon are raised in tanks in a land-based Florida Bluehouse™, not in the ocean, so the water is constantly monitored. This means no disease for the salmon and no damage to the ocean. The secret to making Bluehouse work effectively and safely is its Recirculating Aquaculture Systems (RAS).

    Recirculating Aquaculture Systems

    ocean water

Within Bluehouse Salmon’s 36 tanks, which each contain 450,000 gallons of water, The RAS is continually purifying the water using a state-of-the-art filtration system, protecting the fish from bacteria and disease.

The water, which is over 95% saline and under 5% freshwater, recirculates every 30 minutes, filtering and injecting 1,000 gallons per hour. After ten days, the water is removed and added to the Boulder zone in Southeast Florida’s aquifer system. It remains there for thousands of years, gradually making its way back out into the ocean. Thanks to this controlled, clean environment, the salmon live a healthy life in tanks that are 5% fish and 95% water with controlled currents, allowing the fish to swim upstream just as they would in their natural habitat.

Land-based tanks that use filtered water prevent the fish from encountering common problems, such as sea lice and other wild fish diseases. This makes it possible for Bluehouse Salmon to avoid antibiotics and other chemicals.

Another common issue among ocean fish is microplastics. Unfortunately, the oceans are full of pollution, especially plastic. When plastics break down, they become microplastics that are easy for fish to ingest. It’s horrible for the ocean, the fish, and you. When eating salmon that has ingested microplastics, you’re eating microplastics as well. We all deserve salmon that is just salmon – no antibiotics, no chemicals, and no carcinogens.

    US consumption of salmon

The United States consumes more salmon than any other country in the world. Sadly, 80% of all seafood eaten in the US is imported by air, leaving a significant carbon footprint behind. An essential goal of Bluehouse Salmon is to have the smallest carbon footprint possible. They do this by raising salmon on land in the United States, where it is then easily distributed throughout the country via truck rather than by air, which significantly cuts down on air emissions, time, cost, and fuel.

    A healthy food choice

It never hurts to eat healthier, and salmon makes healthy eating easier. It’s naturally high in Omega-3 fatty acids, which are necessary for heart health and lowered inflammation levels in the body. The American Heart Association recommends that we eat at least two servings of Omega-3 type fish every week. Salmon is also an immune system booster, containing vitamin D and vitamin B6.

Salmon is naturally healthy but can also be unhealthy when fed antibiotics, pesticides, microplastics, and other harmful chemicals. At Bluehouse Salmon, all of those dangers are avoided, and what’s left is pure, natural healthy salmon.

Bluehouse Salmon is known for its mild flavor, which makes it a great option when introducing someone or even yourself to salmon. It’s the perfect healthy meal choice for the entire family. Search for Bluehouse Salmon near you and start enjoying healthy, land-raised salmon from a company that cares about what’s on your plate.

  • Tito’s Vodka Cocktails

    Tito’s Vodka Cocktails

Tito’s Vodka was kind enough to send me some trending cocktail recipes to share with all of you. They look like a heck of a lot of fun, and personally, I am looking forward to trying plenty of them! The names are a riot and include Grapefruit Groove, Tito’s Fire Killer, and Tito’s Thyme Out. If you can’t have fun with drinks like that, I can’t party with you.

Those with an at-home bar likely have a bottle of Tito’s on hand at all times. Why wouldn’t you? It’s perfect to quickly mix with cranberry or soda or go all out with one of Tito’s latest cocktails, like Tito’s Pear Blossom. Maybe this makes me old, but my all-time favorite use for Tito’s is the cosmo. There are so many great new cocktails, and the ones Tito’s has created are fabulous. However, we all have our go-to, and if I am in a vodka mood, cosmopolitan it is. My only complaint is that they are too easy to drink, so be careful!

Check out my favorite cosmo recipe below…

  • Tito’s Pear Blossom

    Tito’s Pear Blossom

I like cocktails with sweetness but plenty of bite, and this one has that. The pear brandy adds a little spice, so this isn’t as sweet as it may sound. Best of all, it tastes fresh, as if you just hand-squeezed all the fruit. I do recommend that the lemon juice is always freshly squeezed. It just tastes better. If you enjoy elderberry cocktails or anything sweet and sour, you’ll like this one.

  • The Macallan: Sotheby’s New York

    The Macallan: Sotheby’s New York

The highly respected Macallan brings impressive results at the Whisky & Whiskey auction.

The Macallan at Sotheby's New York

What began in a humble wooden shed with only two stills in 1824 is now a world-renowned single-malt whisky. The Macallan is one of the most respected names in Scotch whisky, known primarily for its creativity and innovation, such as sherried seasoned oak casks.

Macallan is well respected for many reasons. It’s been distilled for nearly 200 years, is highly endorsed by the one and only James Bond as well as the House of Commons (Macallan is the official Scotch), and, more importantly, The Macallan sets the precedence for how Scotch should taste. Unsurprisingly, it’s turned heads at auctions in the past and sold for jaw-dropping amounts. Earlier this year, a limited-edition Macallan did just that for a good cause.

    Sharing proceeds with charity

The Macallan Distil Your World New York

This year, on February 10th, Sotheby’s of New York held its first Whisky & Whiskey online sale of the year, and the highlight of the event was a specialty lot comprising of an exclusive, limited-edition version of The Macallan’s recent release, “Distil Your World New York.” One bottle was auctioned, and the other is now kept in the archives in Scotland, making the Distil Your World New York label extremely rare. The limited-edition Macallan achieved $250,000, with proceeds going toward ChaShaMa.

ChaShaMa is a non-profit organization based in New York City, created to help and serve artists. They do so by searching for unused real estate and flipping it into artistic spaces where artists can create and display their work. Thanks to Sotheby’s online auction and the sale of the limited-edition Macallan, the arts, underserved communities, and small businesses in New York City are benefiting.

The Macallan has a long-standing relationship with Sotheby’s and is known for supplying auctions with rare editions for charitable causes. Geoff Kirk, Channel Director Secondary Market at The Macallan, says, “We are delighted to continue our long association of partnering with Sotheby’s to present very special releases that raise funds for charitable organizations around the world. The Macallan has a longstanding history celebrating artistry and supporting the arts and we are proud that the funds from this very special release, which pays homage to one of the world’s most iconic cities, will benefit New York City artists through the ChaShaMa charity.”

The Macallan is more than a whisky. Its deep roots and unwavering passion for perfection and innovation set the standard for the entire industry. They not only produce some of the world’s greatest Scotch, but The Macallan team uses their success and skills to make the world a better place.

If you ever get the opportunity to visit The Macallan Estate in Speyside, Scotland, please take it. The sprawling 485-acre estate is stunning, sharing the scenery of the Speyside region, and inside the distillery is just as impressive. While touring, they offer wonderful experiences that you may book ahead of time.

  • Empress 1908 Gin

    Empress 1908 Gin

Empress 1908 Gin is more than a pretty bottle. It’s a must-have for your home bar collection.

These days life is so busy, and I feel like when I have the opportunity to host a gathering, there is no time for extras…things like a perfectly set table, fresh flowers in the center of it, and just an all-around lovely atmosphere like I used to create before life was crazy. When it’s time to entertain, I am always looking for shortcuts that add to the atmosphere and make guests feel welcome. Enter – Empress Gin.

I love gorgeous cocktails. I can’t handle anything too sweet, but if it’s pretty and tastes refreshing I’m all in. I first discovered gin when I had a gin and tonic just a few years ago. It’s a fascinating botanical spirit and each bottle is so different. Empress Gin, by Victoria Distillers, is my new go-to for gin, especially when serving cocktails to guests, and it’s not just because of the beautiful indigo color. However, that part is a fabulous conversation starter.

    Classic Gin Notes

When you first see a pretty drink made with Empress, you may assume it’s going to taste like flowers or maybe quite sweet, simply because it’s that lovely. However, the notes are surprisingly classic and include juniper and citrus in the aroma and a hint of rose and grapefruit on the palate. The finish is nicely warm with cinnamon and coriander. It has many characteristics of a London dry gin, which makes it perfect for a wide variety of cocktails. And guys, just because it’s colorful doesn’t mean it’s only for girls. You deserve a fancy drink as well.

    Elegant color and bottle design

The appealing color comes from the Butterfly Pea Flower in the gin. I have never heard of Butterfly Pea Flour, but it sounds magical, so I’m in. As an added fun twist and a way to make your guests smile, when you add a little lemon to a cocktail made with Empress, the drink turns pink. How fun is that?

I love the bottle design and label as well of Empress 1908 Gin. It has this simple elegance and reminds me of the early 1900s, which is, of course, fitting to 1908.

    Let’s make cocktails

Let’s get to the important stuff. Empress 1908 Gin has great recipe ideas! Try one or all for your next get-together, or treat yourself to an evening at home with your feet up. These cocktails pair well with charcuterie boards and salty snacks. They require few ingredients since the gin is the star of the show.

    Empress and Elderflower

    Empress Elderflower cocktail

I imagine this cocktail on a spring day while relaxing with friends on the deck. Floral notes and citrus make the Empress and Elderflower light and crisp.

    Ingredients:

    • 2 oz Empress 1908 Gin
    • 3 oz Premium Elderflower Tonic or Sparkling Elderflower
    • Grapefruit Slice

Instructions: Build in a Copa glass on ice. Garnish with a grapefruit slice.

    Pink Empress

    Pink Empress cocktail

Using sparkling grapefruit soda is the perfect match with Empress 1908 gin and its citrus notes. Plus, the color is irresistible.

    Ingredients:

    • 2 oz Empress 1908 Gin
    • 4 oz Pink Grapefruit Soda
    • Grapefruit Slice

Instructions: Fill your cocktail glass with ice and pour the Pink Grapefruit Soda in, then float the gin on top. Garnish with a grapefruit slice and give it all a stir. Simple and elegant!

  • Little Leaf Farms

    Little Leaf Farms

A review of some seriously good lettuce. Yes…lettuce.

    Little Leaf Farms lettuce

I recently enjoyed some fabulous lettuce samples from Little Leaf Farms. I know what you’re thinking…what’s the big deal about lettuce? That’s what I thought until we took our first crunchy bite.

I made my husband and myself a couple of salads with the Baby Spring Mix. Please don’t judge my overuse of feta cheese – it’s so good!

    Holy crunch!

I am not exaggerating. We both looked at each other and said this is the crunchiest lettuce we’ve ever had. I am unsure how Little Leaf Farms is doing it, but I have never enjoyed a salad like that. Let’s face it, the first word in the name of this website is “butter.” I don’t ever get excited about lettuce or a salad. What really amazed us was that after the lettuce made a trip from Massachusetts to Illinois, it then sat in our refrigerator for a few days before I made the salads. And still, it was as crunchy as if I had plucked it out of my own garden.

    Clean from the start

Little Leaf Farms does have a “little” secret to creating what might be the world’s best lettuce. They have a unique, advanced growing system in their 10-acre greenhouse called Clean From the Start™. Their goal is to bring the local community fresh, nutritious lettuce that isn’t shipped from far away. Thankfully, you can also have Little Leaf brought right to your door with Amazon Fresh or Instacart.

The Clean From the Start™ growing system uses a hands-free technique, which means there’s no need to triple-wash the lettuce like other lettuces you find in the grocery store. Producers of field-grown greens often use chlorine-based cleaners and other chemicals to get the lettuce clean before it is shipped to the stores. Little Leaf Farms is committed to chemical and pathogen-free lettuce.

It begins with Non-GMO seeds planted onto a gutter that enters the greenhouse via a conveyer belt. The seeds then receive plenty of natural sunlight and recycled rainwater for several weeks. Naturally, pests are kept under control with free-roaming ladybugs and other insects that help keep the unwanted ones away. Little Leaf refuses to use chemical pesticides on the greens you consume.

Once ready to eat, the lettuce is packaged in a recyclable container and shipped to local stores within 24 hours. Local shipping is extremely important to Little Leaf Farms. They believe in the importance of eating your greens before losing their nutritional value and fabulous crunch. Plus, cutting down on long-distance shipping is better for the environment.

    More salad in my life

If I had known ahead of time how crunchy the lettuce was, I would have recorded it. No joke. If anything, I am tired of brown, scary-looking bagged salad mixes from the store. Most of us are lazy when it comes to washing, slicing, and dicing to eat a salad. I love convenience, and if it’s something that has health benefits as well, I am all about it. As you know, we love to eat. If we can enjoy a salad now and then, it’s best that we do.

I have downloaded some great recipes from Little Leaf Farms as well. As it turns out, salad doesn’t have to be boring. Sometimes we need some new, fresh ideas. How about a loaded Greek salad with Lemon Vinaigrette? Or Buffalo Chicken Tender salad? You can find the recipes here.

I hope I haven’t shocked anyone with my new love for salad. Don’t worry; I still love butter and bourbon; however, my heart and waistline are pleased to have met Little Leaf Farms.

  • Buchanan’s Pineapple

    Buchanan’s Pineapple

Buchanan’s Pineapple is tropical sunshine in a bottle.

    Buchanan's Pineapple

Buchanan’s Whisky is well known for its blended Scotch whisky, but are you aware of one of the most popular ways to mix it? In the Hispanic American community, Buchanan’s whisky is often mixed with pineapple juice as a refreshing cocktail (The Buchanita). So, Buchanan’s made it even easier by combining pineapple and whisky in one bottle. Buchanan’s Pineapple is the first of its kind in the Buchanan portfolio, and you’ll be glad they finally did it. The company was generous enough to send me a sample, and here’s what I found…

    The Nose:

The aroma is pineapple-forward with other citrus.

    The Palate:

I have to repeat pineapple-forward, but it’s not overkill. This is a sweet-flavored whisky; when they say pineapple, they mean pineapple. On the palate, there is a light note of caramel and vanilla.

    The Finish:

At the finish, you’ll remember you’re drinking a blended Scotch whisky. The slightest taste of iodine lingers on the tongue along with tropical fruit.

I know there are skeptics out there regarding flavored whisky; however, perhaps that’s because they had to cut their teeth on the hard stuff back in the day. Today, with a whisky like Buchanan’s Pineapple, a newbie can try whisky without getting “burned.” At only 70 proof, it goes down easy and reveals the slightest taste of Scotch. For old pros, Buchanan’s shakes things up a bit and makes drinking Scotch fun. The pineapple is surprisingly refreshing, and well, to tell you the truth, it was a welcome change for someone currently living through a northern winter. It took me to a tropical paradise, which is what Buchanan wants to do.

Buchanan’s Pineapple is running a campaign on social media for those 21 and older called “It’s Piña,” and it’s all about encouraging a tropical state of mind, whether at home or out on the town. James Buchanan, the founder of Buchanan’s whisky, believed in community and sharing, which led to the 200% concept: 100% American identity + 100% Hispanic identity = 200% life. How beautiful is that?

I don’t see Buchanan’s Pineapple as a Scotch to sip neat but rather on the rocks. Even better, it’s perfect for cocktails. Check out the recipes for Piña Fizz and Bucha Colada.
