Ingredients
- For the Meatloaf
2 lbs 2 ground beef
1 cup 1 panko breadcrumbs
1/2 cup 1/2 milk
1/4 cup 1/4 ketchup
2 tbsp 2 Worcestershire sauce
2 2 eggs, beaten
1 small 1 onion, finely chopped
2 cloves 2 garlic, minced
2 tsp 2 salt
1 tsp 1 black pepper
1 tsp 1 dried thyme
2 tsp 2 dried parsley
1/4 tsp 1/4 cayenne pepper, optional
1/4 cup 1/4 finely grated carrots
- For the glaze
1/4 cup 1/4 ketchup
2 tbsp 2 brown sugar
1 tsp 1 Worcestershire sauce
Directions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. We’ll be shaping the meat rather than using a loaf pan.
- Mix breadcrumbs and milk until evenly moistened. Set aside.
- In a large bowl, combine the ground beef, moistened breadcrumbs, ketchup, Worcestershire sauce, eggs, onion, garlic, salt, black pepper, thyme, cayenne pepper, parsley and grated carrots. Mix well using your hands until everything is combined.
- Shape the meat mixture into a loaf and place it on the prepared baking sheet.
- In a small bowl, whisk together ketchup, brown sugar and Worcestershire sauce until well combined. Brush the glaze over the meatloaf.
- Bake the meatloaf uncovered for 45 - 55 minutes or until a meat thermometer reads 160°F (71°C).
- Remove the from the oven and let it rest for 5-10 minutes before slicing and serving.
