1 can 1 (15 oz) of chickpeas, drained and rinsed
1/4 cup 1/4 tahini
1/4 cup 1/4 lemon juice
2 2 garlic cloves, roughly chopped
1/4 cup 1/4 olive oil
1 tsp 1 cumin
salt and pepper, to taste
water as needed
optional garnishes - chickpeas, olive oil, fresh parsley, paprika, sumac, sesame seeds, pine nuts
Directions
- Add tahini, lemon juice and garlic to bowl of a food processor. Process for about 30 seconds until well combined. Scrape down sides of the bowl.
- Add olive oil and cumin and process for another 30 seconds until the mixture is smooth. Scrape down the sides of the bowl again.
- After draining and rinsing the chickpeas, add them to the food processor bowl. Blend for about a minute until everything starts to come together, scraping down sides of bowl as needed. Add salt and pepper to taste.
- If the mixture is thicker than your liking, gradually add water, a tablespoon at a time, while the food processor is running. Continue to process until the hummus reaches your desired consistency.
- Taste and adjust seasonings if necessary, adding more salt, pepper, or lemon juice according to your preference. Process for a final 30 seconds to ensure everything is well combined.
- Transfer hummus to a serving bowl. Optionally you can drizzle with olive oil and sprinkle with chickpeas, fresh parsley, paprika, sumac, sesame seeds, or pine nuts for garnish.
- Serve with pita bread, fresh veggies or use it as a spread in sandwiches and wraps.
