6 oz 6 chopped high-quality semi-sweet chocolate
1/2 cup 1/2 unsalted butter (1 stick)
1/2 cup 1/2 granulated sugar
2 large 2 eggs
2 large 2 egg yolks
1 tsp 1 vanilla extract
1 tsp 1 espresso powder
1/4 cup 1/4 all-purpose flour
pinch salt
powdered sugar for dusting (optional)
Directions
- Preheat your oven to 425°F (220°C). Grease and lightly flour four 6-ounce (170 grams) ramekins or custard cups.
- In a microwave-safe bowl, break the semi-sweet chocolate into pieces and add the butter. Microwave in 20-second intervals, stirring in between, until the chocolate and butter are melted and smooth. Set aside to cool slightly.
- In a separate mixing bowl, combine the granulated sugar, eggs, egg yolks, and vanilla extract. Whisk together until well combined.
- Gradually pour the melted chocolate mixture into the sugar and egg mixture, stirring constantly until smooth.
- Add the flour and salt to the chocolate mixture and stir until just combined. Be careful not to overmix.
- Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- Place the ramekins on a baking sheet and transfer to the preheated oven. Bake for about 10 -12 minutes, or until the edges are set but the centers are still soft and slightly jiggly.
- Remove the lava cakes from the oven and allow them to cool in the ramekins for 1-2 minutes.
- Using oven mitts or a kitchen towel, carefully invert each ramekin onto a serving plate. Gently tap the bottom of the ramekin to release the cake.
- Dust the cakes with powdered sugar if desired. Serve immediately, either on their own or with a side of fresh berries or a scoop of ice cream.
